When we think of lettuce, we imagine the lettuce is grown in a field, transported to us, and sent to our local grocery store. We don’t think of lettuce as grown inside a vertical greenhouse, with reclaimed rainwater, locally grown, with minimal transportation. I was surprised to find out quite a few farms and companies grow lettuce in this manner.
